All our products consist of New Mexico grown chile varieties. Our flame roasted and frozen chile products are harvested fresh daily then frozen quickly to lock in the chile’s natural flavor and nutrients. Our chili powders are also made from chiles that are harvested and processed fresh daily. Our products consist of pure chile, we add no water, preservatives or additives. The flavor of the New Mexico chiles cannot be beat when compared to other varieties used today. One thing that helps our product stand out is our seed stock. We produce our own seed for planting. All of our seed is Certified by the NM Crop Improvement Association guaranteeing that it is what we say it is. Our seed program allows us to maintain the characteristics of our chiles: New Mexico 6-4, NuMex Joe E. Parker, NuMex Big Jim, NuMex Sandia and the two new released varieties NuMex Heritage Big Jim & NuMex Heritage 6-4. The Heritage varieties are the ORIGINAL strain of green chile from the 1960’s with five times the flavor of commercially produced chile. These are the best, most favorable chiles in the world.
Our gentle style of flame roasting has taken over 30 years to perfect. This unique method gently handles the chile from the time they are hand placed in the roaster to being flame roasted at high temperatures and being conveyed out of the roaster and into the packing room. These roasters do not tumble them, tear them or over burn them. Most importantly, this gentle roasting sets our product apart because it brings out the rich flavors that New Mexico chiles have.
