Cooking with Chile
New Mexican cuisine is a blend of Spanish, Native American, and Mexican cooking ingredients and culinary techniques. While familiar items like beans, squash, and corn are often used, one of the most popular ingredients is chile. New Mexico chile can be used as either red or green in a chile recipe. Chile can be made into a delicious spicy sauce that is used to smother enchiladas, burritos, and stuffed sopapillas. Recipes from chile are also commonly used to top cheeseburgers, stuffed into burritos, fried into rellenos (stuffed chiles) and made into a ground beef and potato stew. Green chile is such a popular part of New Mexico cuisine that it can also be found in desserts, breads, pizzas and much more!
